It helps produce delicious baked goods with a golden crust and an airy, bright yellow crumb. In addition to the unique
taste it gives to baked goods, it is easy to work with, ideal for both mixers and kneading machines, suitable for mixing with other flours. Final products have a long shelf life. The flour has a high water absorption capacity (>68%) and is ideal for both immediate and slow-fermentation breadmaking.
